Quick Chili

- 1 lb lean ground beef
- 1 onion, chopped
- 15 oz can diced tomatoes or tomatoes with green chili’s
- 15 oz can chili beans
- 15 oz can kidney beans
- 1-2 Tablespoons chili powder
- 1 Tablespoon garlic powder
- 1 Tablespoon sugar
- ¼ teaspoon ground cumin
- ¼ teaspoon Cajun seasoning
- Up to 2 cups water
In a large pot, cook beef over medium heat until done. Stir in and cook until onion is translucent. Stir in tomatoes, beans, seasonings and water. Bring to a boil, then reduce heat and simmer 20 minutes.
(While this isn’t as good as my slow cooked chili it was a good basic chili and it sure was quick. We enjoyed it over baked potatoes and everyone seemed to like it. I’ll keep this recipe on hand for those days when I forget to start the crock pot going in the morning. We hope you enjoy it to.)
