Rempel Family Meatloaf

(serves 8)

2 lbs Lau Family Farm lean ground beef
2/3 cup crushed buttery crackers (ritz style) or cheese flavored crackers
1 cup shredded Cheddar cheese
1 package dry onion soup
3 eggs, beaten
1/3 cup ketchup (or mix of ketchup and BBQ sauce)
2 Tablespoon and 2 teaspoon steak sauce
Small amount of finely chopped bell pepper and onion if desired

Optional Glaze
1 Tablespoon Honey
3 Tablespoon Ketchup
½ teaspoon Worcestershire sauce.

If using as meatloaf-preheat oven to 350 degrees.

Stir the ground beef, crushed crackers, Cheddar cheese, and onion soup mix in a large bowl until well combined. Whisk the eggs, ketchup, and steak sauce in a separate bowl until smooth. Mix the eggs into the meat until evenly combined, if the mixture seems too dry, add a little water. Press into a 9x5 inch loaf pan. If desired mix together glaze ingredients and spread on loaf before baking.

Bake in preheated oven until meatloaf reaches 160 degrees , about 45 to 60 minutes. Or pan fry patties, until fully cooked.

(If making patties adding a few extra crushed crackers can help ensure the patties stay together.)

John isn’t a big fan of meatloaf so I made this into patties to hide that its technically meatloaf. We all enjoyed it quite a bit, it was certainly a big hit with the kids.
