Taco Chili
Taco Chili from Successful Farming Magazine
1.5 to 2 lbs Lau Family Farm lean ground beef
½ cup chopped onion
One 1.25 oz package of taco seasoning mix
Two 14.5 oz cans diced tomatoes
One 10 oz can diced tomatoes with green chilies
One 16 oz can pinto beans-rinsed and drained
One 15 oz can chili beans in chili sauce
1 cup whole kernel corn (or one can corn)
Monterey Jack or Cheddar Cheese
Tortilla Chips
Brown ground beef and onion. Transfer to your crock-pot. Stir in other ingredients. Cook on low for 8-10 hours or high for 4-5 hours. Sprinkle each serving with cheese and chips.
This recipe can easily be adapted to your own taste. I often use home cooked beans that I have frozen, and/or add fresh or frozen zucchini, and bell pepper. This recipe has been very popular with a wide variety of people. Some find it a bit too hot but most don’t. If I know I’ve got sensitive folks coming sometimes I use 3 cans of regular tomatoes and leave out the tomatoes with chilies.
